Vegetarian Sandwich

I was in a hurry, had a friend over and lunch time hit!
So I had some bell peppers
onions
garlic
eggs and a little milk
cheese
fresh spinach
sprouts
blueberry bagels
mayo and horseradish
and some chips

I browned the onions, garlic and peppers
made scrambled eggs with that.
Added cheese to it.
Spread mayo and horseradish on the bagel
put the sprouts in the sandwich and the egg mixture
add a little fresh spinach to it, sprinkled salt, olive oil and balsamic vinegar.

It was quite a hit!

Pulled Pork Burrito

I used the kind of tortillas you cook.
Then I made brown rice in the rice cooker

3 cups of rice
6 cups of water
2 TBSP of butter or olive oil
1 tsp of salt
1 TBSP of minced garlic
Then I warmed up frozen corn with butter

The pork I cooked all day
In a blender I put
1 cup of lemon juice (bottled is fine)
1 medium onion
Mrs. Dash or Johnny's spice to taste
2 yellow or red bell peppers
Used one of those long pork roasts from Costco or Sams Club (about 9-10 lbs)
Cut the roast into 3 pieces and placed them in the big roaster
Pour the mixture over the meat and let it cook overnight or for 8-10 hours at 250F

In the morning I remove the meat from the sauce and pull it apart.
To the sauce I add a big bottle of catshup (from the grocery store)
A third of a bottle of Heinz 57 (the larger one)
A bit of Horseradish (to taste)
A third of a bottle of Worstershire Sauce
Mix it well and then pour the meat back in.
Let it cook in the sauce for another hour.

The burrito has rice, corn, shredded cheese, pork and cut up avocado.

We all enjoy it.

The pork freezes beautifully and can be eaten in a sandwich, with potatoes, whatever you can come up with.
